Just a little list of all my recent favorite recipes. These recipes are ones that I would consider life changing….recipes that aren’t very difficult, and will have you craving them for years to come.

1) Smitten Kitchens Overnight Sourdough Waffle Recipe

This waffle recipe is everything. Waffles just might be in my top five favorite foods list - but a very specific waffle at that. It needs to have just the right flavor (it can’t taste like a pancake or like a hotel waffle) and it must pair well with my Grandparents homemade maple syrup. The key secret to this recipe is to use 2% or higher milk (skim or 1% won’t help the flavor), and BE SURE TO LET RISE OVERNIGHT OUT OF REFRIGERATOR. This is vital. As an added bonus, I feel very Norwegian while eating these.

2) Cranberry Walnut Bread

I’m pretty sure Whole Foods uses this same recipe…I’ve purchased it many times there, $4.99 a loaf. Recently they haven’t been letting the dough rise, and have been overcooking it. I made it a mission to start making my own, and man oh man - is it better homemade, fresh out of the oven! It ends up costing about $1 homemade (buy ingredients in bulk!), and it’s oh so easy! The only barrier to entry is you need a large cast iron dutch oven - I purchased this one, and love it!

3) Vegan Chipotle Lentil Tacos

Nom nom nom. So easy, so healthy, so inexpensive. A perfect Quarantine taco.

4) Falafel.

Oh my goodness - another life changing recipe. My favorite food, so easy but so impressive. They say to use a food processor, but I make it happen with a regular blender (just blend extra long and keep moving everything to the center of your blender to get the consistency right). I make the falafel, and then make homemade Naan, tzatziki sauce, and cube cucumbers! You can bake the balls like the recipe recommends, otherwise they work well to fry on the stovetop if you are feeling adventurous :)

There is something so soothing about cooking something delicious…it always takes my mind off of everything! And then you get to eat it :) I typed “eating” into my Google Photos search, and found this very attractive photo from Thanksgiving at my grandparents when I was a little girl.
